I’ve mated with things without giving much thought to legality. Felt good at the time.
Given that today is Bastille Day and also the fact that I received a beautiful, aromatic truffle from Kumo/Keith (thank you) I thought to make a nice bistro style winter dish: Steak w/ truffle herb butter, roast brussel sprouts & potato w/ garlic/rosmary and peas (I love peas).
First step was making the truffle herb butter. Couldn’t be easier. Roughly chop herbs (I used a few different types of thyme, oregano, sage, tarragon and loads of parsley), grate a small knob of black truffle and mix it all through a block of softened butter. Roll it into a log with kitchen foil (easy to cut/peel later) and leave it in the freezer. Slice/use as needed - On top of meat/fish/chicken, or roast vegetables, toss through pasta, cook eggs with it … or just have some on toast !!
Now to cook dinner - Hungry !!!
I sautee potato’s in a pan to give a little colour then transfer to a pan in the over to roast through. Same with the brussel sprouts a little later, gives anice caramelized flavour/colour. Peas + cook steak and the truffle herb butter from the freezer.
Where is the wine?
Mrs. Spirito needs no prompting to set the table and open a nice bottle of red from Montenegro (where my Mum was born). Dinner’s ready. Happy Bastille - Vive le France !!!

SO GOOD! I’d take this over Gaté any day of the week.
I’m glad spirito didn’t have time to post back last night… otherwise all that cooking might not have been worth it.
Last legs of winter, the Olympics are on and Mrs. Spirito is hungry. Had a little bit of truffle left so I thought to make a potato, herb and truffle pizza. Sweated off a red onion and waited for it to cool. Tossed it through a sauce of fresh herbs (garlic chives, parsley, rosemary), garlic and olive oil. Thinly sliced potato, par cooked in the oven. Topped with fresh rocket, baby beetroot leaves, a few cheeses (buffalo mozzarella, fior di latte, parmesan) and shaved truffle. Served with a Tuscan red and fresh green salad. Tasty !!!
Time to order some more truffle goodness. Any left Keith?

Snap! I added truffle butter to a nice potato purée and then nice slices of the black gold to garnish the beef ragu I made for dinner… No pictures though…
