meusli bars

I had a go at making el-cheapo meusli bars tonight - it kinda worked, but the end result is more of a sweet sweet mushy ball of goo than a bar of meusli heha… anyone have a good simple recipe for an energy-packed riding snack?

I have my well-renowned slice recipe, which is an adaptation of an oat cookie recipe.

It’s more of a word of mouth style thing, than a strict recipe…

The basic premise is to start with a cookie recipe base (that is - creamed butter, sugar and egg) and include whatever else you like, generally in almost double the volume of the original recipe (ie - if the base recipe calls for 2 cups oats and 1 cup choc chips, I add 3 cups oats, 1 cup coconut and 1 cup dates etc…).

My fave version contains coconut, ginger, apricot, white chocolate and oats. (Ask Cress for comment on that one - she did pronounce it to be the best slice she’s ever tasted).

In the fridge I have this weeks effort of an oat, coconut, apricot and walnut slice.

The options for improvisation and variation are endless.

Not so naughty apricot oat bars

You need:
1 1/4 cups quick cooking oats
1 cup oat bran
1/4 cup skim milk powder
1/4 cup currants
10 dried apricots, chopped
2 tablespoons honey
1 tablespoon pear juice concentrate
2 eggs
1 teaspoon vanilla essence

Method:
Mix dry ingredients in a large bowl. Whisk wet ingredients and mix together well. Press into a greased slice tin, smooth the top and bake for 20 minutes. Cool and cut into bars.

My bit: I haven’t tried this but The Cook and The Chef dude did a similar thing a few months back which looked damn easy. He covered his with chocolate which was mixed with a bit of cream I think (not too much as the chocolate won’t set right), was set in the fridge of course.

It’s a good idea to make your own- I must spend a small fortune each week on Go-Natural nut bars… but as Garth said, no mess, no fuss :mrgreen:

i buy the safeway home brand cherry and coconut muesli bar, choc coated.

Can of JD ‘n’ coke (caffine, sugar, bourbon), a mars bar, a copy of JUGS, Shaved, Hustler (or any other porno) is a perfect mid-ride snack. Even better if it can be enjoyed on park bench in the sun…

(although the ALDI muesli bars with choc swirl are pretty good)

2 cups rolled oats

2 cups rice bubbles

½ cup coconut

½ cup sesame seeds

½ cup sunflower seeds

½ cup diced dried apricots

¾ cup firmly packed brown sugar

4 table honey

4 table peanut paste

125g butter

Combine dry ingredients in large bowl and mix well.

Combine brown sugar, honey, peanut paste and butter in saucepan. Heat until melted then simmer stirring constantly for 5 minutes or until mixture is thick and caramel in colour. Combine honey mixture with dry ingredients and mix well. PRESS evenly into greased lamington tin (12 x 8). I wet a tablespoon and press it down firmly with the back of the spoon. Refrigerate until firm before cutting. Store in frig.

1 jar Rice malt syrup (supermarket or health food shop)
15 tsp powder gatorade or staminade
1 tsp salt
hot water to 500ml
mix and allow to cool

about the same consistency and carb/mineral composition as leppin
